It doesn’t matter if you grew up in Hanoi, Saigon, or a small town in the Mekong Delta — everyone has a phở story. It might be the bowl your grandmother made on Sunday mornings. Ask ten Vietnamese about the best phở, and you’ll get ten different answers. But every answer is right. Because phở is personal.


What Makes Phở Special

At first glance, it looks simple: noodles, broth, herbs, meat. But ask anyone who’s ever made it, and they’ll tell you — phở is patience.

It’s democratic food. Rich, poor, student, worker, boss — everyone sits on the same stools, leans over the same steam, and eats the same bowl. For a few minutes, nothing else matters except the noodles in front of you.

Phở at XEOM

When we opened XEOM in Collingwood, we knew we couldn’t skip phở. To serve Vietnamese food without phở would be like telling a story with the first chapter missing.

But here’s the thing — making phở away from Vietnam is different. Ingredients change. The climate is different. People’s expectations are different. Still, we keep to the same heart: a broth that takes time, flavors that are balanced, and bowls that invite you to build your own taste.

Our phở has become one of the most loved dishes on our menu. We see it when regulars walk in and order without even glancing at the list. We hear it in the sighs of relief after the first spoonful. And we feel it when Vietnamese customers tell us, “This tastes like home.”

That’s the highest compliment we can ever receive.
